Better Than Restaurant Chicken Marinade

Guys, one of the silver linings of COVID-19? I am cooking more often! And not being in a rush to do so has made my dishes taste quite tasty! My family has been raving about my latest, so I had to share this better-than-restaurant chicken marinade right away!

My teen kids are the pickiest eaters. I, myself, don’t love chicken unless it is exceptional in taste. I have the most delicious chicken marinade to share with you that even the hardest to please will love! 

What’s even better, this chicken dish is so versatile. You can eat it as your main course with a veggie and starch, chop it up and enjoy it on top of salad, make chicken tacos, burritos, or eat it plain! Yes. It is THAT good. And it’s so easy.

The flavors of each simple ingredient you likely already have at home, meld together perfectly to give this chicken a depth of flavor you’ll notice when you taste it. And I love how moist this chicken stays as it cooks! I can put it on a plain bed of lettuce with just apple cider as dressing and feel like I’m enjoying a salad at a restaurant.

I make this in a double batch so my family can help themselves to it for days. It is the perfect quarantine chicken for a mom who does not want to cook every day but doesn’t want her family to starve, either! After a month in quarantine, you know what I mean! 

I like our chicken best with extra browned sides. Cook it to the brownness of your liking!

Better Than Restaurant Chicken Marinade

This chicken marinate will please even the pickiest eater.

Ingredients

  • 1/2 cup olive oil
  • 1/2 cup lemon juice (3 lemons) fresh is best
  • 1 tsp kosher salt
  • 1 tsp honey
  • 1/2 tsp pepper
  • 2 lbs boneless chicken breast
  • 4 cloves smashed garlic

Instructions

  • add all ingredients in a large ziploc bag
  • marinate for 3 hours up to overnight (I like overnight best)
  • fry on a cast iron pan (or grill)
  • on cast iron (no oil needed), remove the marinated chicken from bag and cook for 7 minutes on each side or until the liquid has evaporated and chicken is browned. Flip and cook 7 more minutes.

Notes

I use a Le Creuset cast iron pan to make this recipe but I think it would be delicious cooked on a grill as well! 
Chicken is better, the longer you marinate it (up to 24 hours)!
