I love to eat. When I try to eat less, I end up gaining weight because I obsess so much over my restrictions that I end up caving and eating more than usual!
My new approach is to eat as much as I want, but with healthier food that tastes good.
My most recent discovery is zucchini! It has been around forever and people eat it all the time. But I was not on the bandwagon until I realized the texture and taste of zucchini is such that I can make it take the form of whatever I want.
I made Zucchini Sticks using a recipe by Skinny Taste and was blown away at how delicious they were.
I recently bought a spiralizer to make zoodles, to replace noodles. I purchased this one by Paderno via Amazon, since it received the most positive reviews. It is very easy to use and I love the suction cups that hold it in place while I am zoodling.
My family LOVES Rao’s Marinara Sauce. It is pricey ($7.50-$11 per 32oz. jar, depending on where you buy), but so worth it! To make a jar go further, I add 15-30 oz. of Hunts tomato sauce. Have you tried it?
My family likes to have left overs for the next day so I usually dilute the Rao’s jar with a large Hunts tomato sauce container and it tastes just as delicious. What I love about this sauce is that it is so tasty that I literally don’t need to add anything else to the sauce. But the boys do like me to add cooked ground beef which makes this sauce taste even better.
I’ll make pasta for my family and zoodles for me. When the sauce is paired with zoodles, I feel like I’m eating a big bowl of pasta. My stomach and mind are very satisfied… but with a fraction of the calories and many times the nutrients. I also like to dip the breaded zucchini sticks in this sauce. So good.
